Ingredients
2 lbs sweet potatoes, peeled and cubed
2 tbsp olive oil
1/4 cup pure maple syrup
1 tsp ground cinnamon
1/4 tsp cayenne pepper
1/2 tsp salt
1/4 tsp black pepper
1 tbsp fresh thyme leaves
Instructions
1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
2. In a large mixing bowl, combine olive oil, maple syrup, cinnamon, cayenne pepper, salt, and black pepper.
3. Add the cubed sweet potatoes to the bowl and toss until they are evenly coated with the spice mixture.
4. Spread the sweet potatoes in a single layer on the prepared baking sheet.
5. Roast in the preheated oven for 25-30 minutes, turning once halfway through, until the sweet potatoes are tender and caramelized.
6. Remove from the oven and sprinkle with fresh thyme leaves before serving.
