Spiced Kale and Sweet Potato Soup

Ingredients

1 tbsp olive oil
1 large onion, diced
2 cloves garlic, minced
1 tsp ground cumin
1/2 tsp ground coriander
1/4 tsp cayenne pepper
4 cups vegetable broth
2 cups water
3 cups kale, chopped
2 medium sweet potatoes, peeled and cubed
1 cup canned chickpeas, drained and rinsed
Salt, to taste
Black pepper, to taste

Instructions

1. Heat olive oil in a large pot over medium heat. Add onions and garlic, sauté until onions are translucent.
2. Stir in cumin, coriander, and cayenne pepper, cooking for an additional minute.
3. Add vegetable broth and water, bringing the mixture to a boil.
4. Add sweet potatoes and simmer for 10 minutes, or until they begin to soften.
5. Stir in kale and chickpeas, continuing to simmer for an additional 15 minutes, until sweet potatoes are tender.
6. Season with salt and black pepper to taste.
7. Serve hot and enjoy!

Storage

Store leftover soup in an airtight container in the refrigerator for up to 4 days.

Reheating

Transfer the soup to a pot and reheat over medium heat, stirring occasionally, until heated through.
