Spiced Honey Pumpkin Muffins

Ingredients
1 cup canned pumpkin puree
1/2 cup honey
1/2 cup unsalted butter, melted
1/4 cup brown sugar
2 large eggs
1 tsp vanilla extract
1 3/4 cups all-purpose flour
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1 tsp ground cinnamon
1/2 tsp ground nutmeg
1/4 tsp ground cloves
1/4 tsp ground ginger
1/2 cup chopped pecans (optional)
Instructions
1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
2. In a large bowl, combine the pumpkin puree, honey, melted butter, brown sugar, eggs, and vanilla extract. Mix well until smooth.
3. In another bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, cloves, and ginger.
4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
5. Fold in the pecans, if using.
6. Divide the batter evenly among the muffin cups, filling each about 2/3 full.
7. Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
8. Allow the muffins to cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
Storage
Store the muffins in an airtight container at room temperature for up to 3 days or in the refrigerator for up to a week.
Reheating
To reheat, warm the muffins in a 300°F (150°C) oven for about 5 minutes or microwave for about 15-20 seconds.
