Ingredients

2 cups all-purpose flour
1 1/2 tsp baking powder
1/2 tsp baking soda
1 tsp ground cinnamon
1/2 tsp ground nutmeg
1/2 tsp ground ginger
1/4 tsp ground cloves
1/4 tsp salt
3/4 cup unsalted butter, softened
1 cup granulated sugar
1/2 cup honey
3 large eggs
1 tsp vanilla extract
2 cups grated carrots
1/2 cup chopped walnuts
1 cup raisins
8 oz cream cheese, softened
1/4 cup honey
1/2 cup powdered sugar
1/2 tsp vanilla extract

Instructions

1. Preheat the oven to 350°F (175°C). Grease a 9x13 inch baking pan.
2. In a bowl, mix flour, baking powder, baking soda, cinnamon, nutmeg, ginger, cloves, and salt.
3. In another bowl, cream together butter and sugar until light and fluffy. Add honey, eggs, and vanilla extract, mixing well.
4. Gradually add dry ingredients to the wet mixture, stirring just until combined.
5. Fold in grated carrots, walnuts, and raisins.
6. Pour batter into the prepared pan and spread evenly.
7. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
8. Allow cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
9. For the frosting, beat cream cheese, honey, powdered sugar, and vanilla extract until smooth and creamy.
10. Spread frosting over the cooled cake before serving.

Storage

Store in an airtight container in the refrigerator for up to 5 days.

Reheating
