Ingredients
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground ginger
1 teaspoon ground cinnamon
1/4 teaspoon ground cloves
3/4 cup unsalted butter, softened
1 cup granulated sugar
1/4 cup molasses
1 large egg
1 teaspoon vanilla extract
1/3 cup granulated sugar, for rolling
Instructions
1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
2. In a medium bowl, whisk together the flour, baking soda, salt, ginger, cinnamon, and cloves. Set aside.
3. In a large bowl, using an electric mixer, cream the butter and sugar together until light and fluffy.
4. Add the molasses, egg, and vanilla extract to the butter mixture and beat until well combined.
5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
6. Scoop tablespoon-sized portions of dough and roll them into balls. Roll each ball in granulated sugar to coat.
7. Place the dough balls on the prepared baking sheets, spacing them about 2 inches apart.
8. Bake for 10-12 minutes, or until the edges are set but the centers are still soft.
9. Allow the cookies to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
Storage
Store the cookies in an airtight container at room temperature for up to one week.
Reheating
Enjoy the cookies at room temperature or warm them in a 300°F oven for 5 minutes.
