Spiced Citrus Black Bean Soup

Ingredients

2 tbsp olive oil
1 medium onion, chopped
2 cloves garlic, minced
1 tsp cumin
1/2 tsp smoked paprika
1/4 tsp cayenne pepper
3 cups cooked black beans
4 cups vegetable broth
1 orange, juiced
1 lime, juiced
1 red bell pepper, diced
1 tsp salt
1/2 tsp black pepper
1/4 cup cilantro, chopped
1 avocado, sliced for garnish
Tortilla chips, for serving

Instructions

1. Heat olive oil in a large pot over medium heat.
2. Add chopped onion and minced garlic, sauté until translucent.
3. Stir in cumin, smoked paprika, and cayenne pepper, cook for another minute.
4. Add black beans and vegetable broth, bring to a simmer.
5. Stir in orange juice and lime juice, continue to simmer for 10 minutes.
6. Add diced red bell pepper, salt, and black pepper, simmer for another 5 minutes.
7. Use an immersion blender to partially blend the soup to desired consistency.
8. Stir in chopped cilantro before serving.
9. Garnish with avocado slices and serve with tortilla chips.

Storage

Refrigerate in an airtight container for up to 4 days. Freeze for up to 3 months.

Reheating

Reheat gently on the stove over medium heat until warmed through, or microwave on high in 1-minute intervals, stirring in between.
