Ingredients
1 1/2 cups all-purpose flour
1/2 cup unsweetened cocoa powder
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
1/2 cup unsalted butter, melted
1 cup granulated sugar
2 large eggs
1 tsp vanilla extract
1 1/2 cups grated zucchini
1/2 cup semi-sweet chocolate chips
1/2 cup chopped walnuts (optional)
Instructions
1. Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
2. In a medium bowl, whisk together the flour, cocoa powder, baking soda, baking powder, salt, cinnamon, and nutmeg.
3. In a large bowl, mix melted butter and sugar until well combined. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
5. Fold in the grated zucchini and chocolate chips, and walnuts if using.
6. Pour the batter into the prepared loaf pan and spread evenly.
7. Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
8. Let cool in the pan for 15 minutes, then transfer to a wire rack to cool completely.
Storage
Store the zucchini bread in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
Reheating
Reheat individual slices in the microwave for 10-15 seconds or until warmed to your liking.
