Spiced Chai Applesauce Cake

Ingredients
1 1/2 cups all-purpose flour
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1 tsp ground cinnamon
1/2 tsp ground ginger
1/4 tsp ground cardamom
1/4 tsp ground cloves
1/2 cup unsalted butter, softened
3/4 cup granulated sugar
1/4 cup packed brown sugar
2 large eggs
1 cup unsweetened applesauce
1 tsp vanilla extract
1/2 cup chopped walnuts (optional)
Instructions
1. Preheat your oven to 350°F and grease a 9-inch round cake pan.
2. In a medium bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, ginger, cardamom, and cloves.
3. In a large bowl, cream butter, granulated sugar, and brown sugar until light and fluffy.
4. Add eggs one at a time, beating well after each addition.
5. Mix in applesauce and vanilla extract until well combined.
6. Gradually add the dry ingredients to the wet ingredients, stirring just until combined.
7. Fold in chopped walnuts if using.
8. Pour the batter into the prepared pan and smooth the top with a spatula.
9. Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
10. Allow the cake to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Storage
Store in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
Reheating
To reheat, warm slices in the microwave for 10-15 seconds or in a preheated oven at 300°F for 5 minutes.
