Spiced Apple Stuffed Pepper Soup

Ingredients
1 lb ground turkey
1 tbsp olive oil
4 large bell peppers, diced
1 onion, chopped
2 garlic cloves, minced
1 tsp ground cinnamon
1/2 tsp ground nutmeg
1/2 tsp ground cumin
2 large apples, peeled and diced
6 cups chicken broth
1 cup cooked rice
1 can (14 oz) diced tomatoes
Salt and pepper to taste
Fresh parsley for garnish
Instructions
1. Heat olive oil in a large pot over medium heat.
2. Add ground turkey and cook until browned, breaking it apart with a spoon.
3. Stir in diced bell peppers, onion, and garlic, cooking until softened.
4. Add cinnamon, nutmeg, and cumin, stirring well to coat vegetables and meat.
5. Mix in diced apples, chicken broth, cooked rice, and diced tomatoes.
6. Bring to a boil, then reduce heat and simmer for 20 minutes.
7. Season with salt and pepper to taste.
8. Serve hot, garnished with fresh parsley.
Storage
Refrigerate in airtight containers for up to 3 days.
