Spiced Apple Pork Roast

Ingredients
3 lbs pork loin roast
2 large apples, sliced
1 large onion, sliced
3 cloves garlic, minced
1/2 cup apple cider
1/4 cup brown sugar
1 tbsp Dijon mustard
1 tbsp fresh ginger, grated
1 tsp cinnamon
1/2 tsp ground cloves
1/2 tsp nutmeg
1 tsp salt
1/2 tsp black pepper
1 tbsp olive oil
Instructions
1) In a small bowl, mix together the apple cider, brown sugar, Dijon mustard, grated ginger, cinnamon, cloves, nutmeg, salt, and pepper.
2) Heat olive oil in a skillet over medium-high heat. Sear the pork roast on all sides until browned.
3) Place the sliced apples and onions at the bottom of the crock pot.
4) Place the seared pork loin on top of the apples and onions.
5) Pour the apple cider mixture over the pork roast.
6) Cover and cook on low for 6-7 hours or until the pork is tender and the flavors have melded.
7) Slice and serve with the apples and onion mixture from the crock pot.
Storage
Store cooled leftovers in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat in the microwave or in a saucepan over medium heat until warmed through.
