Spaghetti with Herb-Infused Turkey Meatballs

Ingredients

1 lb ground turkey
1/2 cup breadcrumbs
1/4 cup finely chopped fresh parsley
2 tbsp chopped fresh basil
1 egg
1/4 cup grated Parmesan cheese
2 cloves garlic, minced
1/2 tsp salt
1/4 tsp black pepper
2 tbsp olive oil
1 onion, chopped
2 cans (14.5 oz each) diced tomatoes
1 tbsp tomato paste
1 lb spaghetti
Salt for pasta water
Grated Parmesan for serving
Fresh basil leaves for garnish

Instructions

1. In a large bowl, combine ground turkey, breadcrumbs, parsley, basil, egg, Parmesan cheese, minced garlic, salt, and pepper.
2. Mix until just combined and form into 1.5-inch meatballs.
3. Heat olive oil in a large skillet over medium heat. Add meatballs and brown on all sides, about 6-8 minutes.
4. Remove meatballs from skillet and set aside. Add chopped onion to the skillet and sauté until translucent.
5. Stir in diced tomatoes and tomato paste, and bring to a simmer. Return meatballs to the skillet, cover, and simmer for 25 minutes.
6. While meatballs are simmering, cook spaghetti according to package instructions in salted water. Drain and set aside.
7. Serve meatballs and sauce over spaghetti. Garnish with grated Parmesan and fresh basil leaves.

Storage

Store cooled meatballs and sauce in an airtight container in the refrigerator for up to 3 days. Spaghetti can be stored separately to maintain texture.

Reheating

Reheat meatballs and sauce in a saucepan over low heat until warmed through. Add a splash of water if needed to loosen the sauce. Reheat spaghetti in the microwave with a damp paper towel over it to prevent drying out.
