Ingredients
1 medium spaghetti squash
1 tablespoon olive oil
1 pound ground turkey
1 small onion, diced
2 cloves garlic, minced
1 can (14.5 oz) crushed tomatoes
1 tablespoon tomato paste
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon red pepper flakes
1/4 cup grated Parmesan cheese
Fresh basil leaves for garnish
Instructions
1. Preheat the oven to 400°F (200°C).
2. Cut the spaghetti squash in half lengthwise and scoop out the seeds.
3. Brush the inside with olive oil and place cut-side down on a baking sheet.
4. Roast for 40 minutes or until tender.
5. In a large skillet over medium heat, cook the ground turkey until browned.
6. Add diced onion and garlic and sauté until translucent.
7. Stir in crushed tomatoes, tomato paste, oregano, basil, salt, black pepper, and red pepper flakes.
8. Simmer for 15 minutes, stirring occasionally.
9. Use a fork to scrape the roasted spaghetti squash into strands.
10. Serve the squash topped with turkey marinara, grated Parmesan cheese, and fresh basil.
Storage
Store leftovers in an airtight container in the refrigerator for up to 3 days.
