Ingredients

1 lb ground turkey
1 tbsp olive oil
1 cup diced onions
3 cloves garlic, minced
1 cup diced red bell peppers
1 cup corn kernels
1 can (15 oz) black beans, drained
1 can (15 oz) kidney beans, drained
1 can (15 oz) diced tomatoes
2 cups chicken broth
1 tbsp chili powder
1 tbsp cumin
1 tsp smoked paprika
Salt and pepper to taste
1 lime, juiced
1/4 cup chopped cilantro

Instructions

1. In a large pot, heat olive oil over medium heat and sauté onions and garlic until fragrant.
2. Add ground turkey and cook until browned.
3. Stir in bell peppers and corn, cooking for another 5 minutes.
4. Add black beans, kidney beans, diced tomatoes, and chicken broth.
5. Season with chili powder, cumin, smoked paprika, salt, and pepper.
6. Simmer for 20-25 minutes, stirring occasionally.
7. Stir in lime juice and cilantro before serving.

Storage

Store in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat gently in a pot over medium heat, or microwave on medium setting, stirring occasionally until heated through.
