Ingredients
1 lb ground beef
1 packet taco seasoning
1 can (15 oz) black beans, drained and rinsed
1 can (15 oz) corn, drained
2 cups shredded Mexican blend cheese
1 can (10 oz) diced tomatoes with green chilies
1 cup salsa
1 box (8.5 oz) cornbread mix
1/3 cup milk
1 egg
Instructions
1. Preheat your oven to 375°F (190°C).
2. In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
3. Stir in the taco seasoning, black beans, corn, diced tomatoes with green chilies, and salsa. Simmer for 5 minutes.
4. Transfer the beef mixture to a greased 9x13-inch baking dish.
5. In a bowl, combine the cornbread mix, milk, and egg. Stir until just combined.
6. Spread the cornbread mixture evenly over the beef mixture.
7. Sprinkle shredded cheese over the top.
8. Bake in the preheated oven for 25-30 minutes, or until the cornbread is golden brown.
9. Let it cool for 5 minutes before serving.
