Southwestern Chipotle Taco Soup

Ingredients
1 lb ground beef
1 tbsp olive oil
1 medium onion, diced
3 cloves garlic, minced
1 red bell pepper, diced
1 green bell pepper, diced
1 can (15 oz) black beans, drained and rinsed
1 can (15 oz) corn kernels, drained
1 can (15 oz) diced tomatoes with green chilies
1 can (15 oz) tomato sauce
2 cups beef broth
2 tbsp chipotle peppers in adobo sauce, chopped
1 tbsp ground cumin
1 tsp smoked paprika
1 tsp dried oregano
Salt and pepper to taste
1 lime, juiced
1/4 cup fresh cilantro, chopped
Tortilla chips for serving
Sour cream for topping
Shredded cheese for topping
Instructions
1. In a large pot, heat olive oil over medium heat. Add ground beef and cook until browned, breaking it apart with a spoon.
2. Add onion and garlic, sauté until the onion is translucent.
3. Stir in red and green bell peppers, cooking for another 3-4 minutes.
4. Add black beans, corn, diced tomatoes with green chilies, and tomato sauce.
5. Pour in beef broth and add chipotle peppers, cumin, smoked paprika, oregano, salt, and pepper.
6. Bring to a boil, then reduce heat and simmer for 20-25 minutes, stirring occasionally.
7. Stir in lime juice and cilantro before serving.
8. Serve hot in bowls, topped with tortilla chips, sour cream, and shredded cheese.
Storage
Store leftover soup in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat the soup on the stovetop over medium heat until warmed through, or microwave in a microwave-safe container.
