Ingredients
2 lbs ground beef
1 cup breadcrumbs
1/2 cup corn kernels
1/2 cup black beans
1 small onion, finely chopped
2 cloves garlic, minced
1/4 cup chipotle peppers in adobo sauce, chopped
2 eggs, lightly beaten
1/4 cup ketchup
1 tbsp Worcestershire sauce
1 tsp ground cumin
1 tsp chili powder
1 tsp salt
1/2 tsp black pepper
1/4 cup fresh cilantro, chopped
Instructions
1. Preheat your oven to 375°F (190°C).
2. In a large mixing bowl, combine the ground beef, breadcrumbs, corn, black beans, onion, garlic, chipotle peppers, eggs, ketchup, Worcestershire sauce, cumin, chili powder, salt, and black pepper.
3. Mix the ingredients thoroughly until well combined.
4. Shape the mixture into a loaf and place it in a greased loaf pan.
5. Bake in the preheated oven for about 1 hour, or until the internal temperature reaches 160°F (71°C).
6. Let the meatloaf rest for 10 minutes before slicing and serving.
7. Garnish with fresh cilantro before serving.
Storage
Store the cooled meatloaf in an airtight container in the refrigerator for up to 4 days.
Reheating
Reheat slices in the microwave on medium power for 2-3 minutes, or in a preheated oven at 350°F (175°C) for 10-15 minutes until warmed through.
