Southwestern Chipotle Chili

Ingredients

1.5 lbs ground beef
1 large onion, chopped
3 cloves garlic, minced
1 red bell pepper, chopped
1 yellow bell pepper, chopped
2 chipotle peppers in adobo sauce, chopped
1 can (15 oz) black beans, drained and rinsed
1 can (15 oz) kidney beans, drained and rinsed
1 can (14.5 oz) diced tomatoes
1 cup corn kernels, fresh or frozen
2 tbsp chili powder
1 tbsp ground cumin
1 tsp smoked paprika
1 tsp salt
1/2 tsp black pepper
2 cups beef broth
1 tbsp olive oil

Instructions

1. In a large pot, heat olive oil over medium heat. Add the onion and garlic, and sauté until the onion is translucent.
2. Add the ground beef, breaking it apart with a spoon, and cook until browned.
3. Stir in the red and yellow bell peppers, and cook for an additional 5 minutes until they start to soften.
4. Add the chipotle peppers, black beans, kidney beans, diced tomatoes, corn, chili powder, cumin, smoked paprika, salt, and black pepper. Stir well to combine.
5. Pour in the beef broth, bring the mixture to a boil, then reduce heat to low and let it simmer for 30 minutes, stirring occasionally.
6. Serve hot, garnished with sour cream, shredded cheese, and chopped cilantro if desired.

Storage

Store the chili in an airtight container in the refrigerator for up to 4 days.

Reheating

Reheat individual portions in a microwave-safe bowl, covered, on medium heat for 2-3 minutes or until heated through. Alternatively, reheat on the stove over low heat, stirring occasionally, until warmed through.
