Ingredients
1 medium head cabbage, chopped
4 medium green tomatoes, chopped
2 large onions, diced
1 green bell pepper, diced
1 red bell pepper, diced
1 cup yellow mustard seeds
2 cups sugar
2 cups apple cider vinegar
1 tablespoon salt
1 teaspoon turmeric
1 teaspoon celery seeds
1 teaspoon dry mustard
1 teaspoon ground ginger
Instructions
1. In a large mixing bowl, combine cabbage, tomatoes, onions, and peppers.
2. In a separate pot, mix mustard seeds, sugar, vinegar, salt, turmeric, celery seeds, dry mustard, and ginger. Bring to a boil.
3. Once boiling, add the vegetable mix to the pot. Stir well to combine.
4. Reduce the heat and let simmer for 30 minutes, stirring occasionally.
5. Remove from heat and let cool before transferring to sterilized jars.
Storage
Store in a cool, dark place for up to 1 year. Once opened, refrigerate and use within 1 month.
Reheating
Enjoy cold directly from the jar or allow to come to room temperature before serving for enhanced flavor.
