Southern Style Collard Greens

Ingredients
2 lbs collard greens, trimmed and chopped
1 smoked ham hock
4 cups water
1 medium onion, chopped
2 cloves garlic, minced
1 tsp red pepper flakes
1 tbsp olive oil
Salt to taste
Black pepper to taste
Instructions
1. Heat olive oil in a large pot over medium heat.
2. Add chopped onion and garlic, then sauté until the onion is translucent.
3. Add the smoked ham hock and water, bringing the mixture to a boil.
4. Reduce heat to low, cover, and simmer for 30 minutes.
5. Add collard greens to the pot, stirring well.
6. Season with red pepper flakes, salt, and black pepper.
7. Cover and cook for an additional 45 minutes, stirring occasionally until the greens are tender.
8. Remove the ham hock, shred the meat, and return it to the pot.
9. Serve hot with your favorite Southern meal.
Storage
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat in a saucepan over medium heat until warmed through, adding a splash of water if needed.
