Southern-Style Black-Eyed Peas

Ingredients
1 lb dried black-eyed peas
6 cups water
4 slices smoked bacon, chopped
1 medium onion, diced
2 garlic cloves, minced
1 tsp smoked paprika
1/2 tsp cayenne pepper
1 tsp salt
1/2 tsp black pepper
1 bay leaf
2 tbsp apple cider vinegar
1 tbsp olive oil
2 green onions, chopped for garnish
Instructions
1. Rinse and sort the black-eyed peas.
2. In a large pot, add the peas and 6 cups of water. Bring to a boil, then reduce to a simmer.
3. In a skillet over medium heat, cook the bacon until crisp. Remove and set aside, leaving the grease in the skillet.
4. Add the onion and garlic to the skillet and sauté until translucent.
5. Add the bacon, onion, and garlic to the pot with the peas.
6. Stir in the smoked paprika, cayenne, salt, black pepper, and bay leaf, and let it simmer for about 1 hour or until peas are tender.
7. Stir in the apple cider vinegar and olive oil.
8. Remove the bay leaf before serving.
9. Garnish with green onions.
Storage
Store in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat on the stove over medium heat, adding a splash of water if necessary, until warmed through.
