Southern Shrimp Delight
A delightful Southern dish that brings the classic combination of tender shrimp and creamy grits to your table, highlighting the rich flavors of the South in every bite.

Ingredients
1 lb large shrimp, peeled and deveined
2 cups water
2 cups milk
1 cup stone-ground grits
1 cup shredded sharp cheddar cheese
4 slices bacon, chopped
1/4 cup scallions, chopped
2 cloves garlic, minced
1 tablespoon lemon juice
1 teaspoon hot sauce
1 teaspoon salt
1/2 teaspoon ground black pepper
1 tablespoon butter
Instructions
1. Bring water and milk to a boil in a large saucepan. Slowly stir in grits, reduce heat to low, and simmer, stirring frequently, until thickened, about 25 minutes.
2. Stir in cheese until melted and grits are creamy, then cover and set aside to keep warm.
3. In a large skillet, cook bacon over medium heat until crispy, then transfer to a plate lined with paper towels.
4. In the same skillet, add shrimp, garlic, lemon juice, hot sauce, salt, and pepper to the bacon drippings. Cook until shrimp are pink and opaque, about 3-4 minutes.
5. Stir in bacon and scallions, then remove from heat.
6. Serve shrimp mixture over prepared grits, garnishing with additional scallions if desired.
Storage
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat in a skillet over medium heat until warmed through, or microwave on medium power for 1-2 minutes.
