Southern Humdinger Cake

Ingredients

3 cups all-purpose flour
2 cups granulated sugar
1 tsp baking soda
1/2 tsp salt
1 tsp ground cinnamon
3 large eggs
1 cup vegetable oil
2 tsp vanilla extract
8 oz crushed pineapple, undrained
1 cup chopped pecans
1 1/2 cups mashed ripe bananas
1/2 cup shredded coconut
8 oz cream cheese, softened
1/2 cup unsalted butter, softened
4 cups powdered sugar
1 tsp vanilla extract
1/2 cup chopped pecans for garnish

Instructions

1. Preheat oven to 350°F and grease three 9-inch round cake pans.
2. In a large bowl, whisk together flour, sugar, baking soda, salt, and cinnamon.
3. Add eggs, oil, and vanilla to the dry ingredients; mix until combined.
4. Stir in pineapple, pecans, bananas, and coconut until just combined.
5. Divide batter evenly among prepared cake pans.
6. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
7. Cool cakes in pans for 10 minutes, then turn out onto wire racks to cool completely.
8. For frosting, beat cream cheese and butter until smooth. Gradually add powdered sugar and vanilla, beating until light and fluffy.
9. Frost cooled cake layers, stacking them. Garnish with chopped pecans.
10. Chill for at least an hour before serving for best flavor.

Storage

Store leftover cake in an airtight container in the refrigerator for up to 5 days.

Reheating

Allow cake to come to room temperature for about 30 minutes or microwave individual slices for 15-20 seconds.
