Ingredients

1 pint fresh oysters, shucked and drained
1 cup all-purpose flour
1/2 cup yellow cornmeal
1 tsp salt
1 tsp black pepper
1/2 tsp paprika
1/4 tsp cayenne pepper
2 large eggs
1/4 cup milk
Vegetable oil, for frying
Lemon wedges, for serving

Instructions

1. In a shallow bowl, mix together the flour, cornmeal, salt, black pepper, paprika, and cayenne pepper.
2. In another bowl, whisk the eggs and milk until well combined.
3. Dip each oyster first in the flour mixture, then in the egg mixture, and back into the flour mixture, ensuring each is well coated.
4. Heat about 2 inches of vegetable oil in a large skillet over medium-high heat until it reaches 350°F.
5. Carefully add oysters to the hot oil, frying in batches to avoid overcrowding, and cook for about 2-3 minutes per side or until golden brown and crispy.
6. Remove oysters from the oil and drain on paper towels.
7. Serve hot with lemon wedges.

Storage

Store leftover fried oysters in an airtight container in the refrigerator for up to 2 days.

Reheating

To reheat, place oysters on a baking sheet in a preheated 350°F oven for 10 minutes or until heated through and crispy.
