Ingredients

1 lb boneless skinless chicken breast
1 tbsp olive oil
1 cup BBQ sauce
1 12-inch pizza crust
1 cup smoked gouda cheese, shredded
1/2 cup mozzarella cheese, shredded
1 cup pineapple chunks
1/4 cup red onion, thinly sliced
1 tbsp fresh cilantro, chopped
Salt and pepper to taste

Instructions

1. Preheat the oven to 450°F.
2. Season the chicken breast with salt and pepper and cook in a skillet over medium heat with olive oil until no longer pink, about 6-8 minutes per side.
3. Remove the chicken from heat and let it rest for a few minutes before slicing thinly.
4. Spread BBQ sauce evenly over the pizza crust.
5. Layer the sliced chicken, smoked gouda, mozzarella, pineapple, and red onion evenly over the crust.
6. Bake in the preheated oven for 12-15 minutes, until the cheese is bubbly and golden.
