Ingredients
1 lb navy beans
2 smoked ham hocks
1 large onion, chopped
3 cloves garlic, minced
2 carrots, diced
2 celery stalks, diced
1 bay leaf
1 tsp smoked paprika
Salt and pepper to taste
8 cups chicken broth
Instructions
1. Rinse and soak the navy beans overnight.
2. In a large pot, add the soaked beans, ham hocks, onion, garlic, carrots, celery, bay leaf, smoked paprika, salt, and pepper.
3. Pour in the chicken broth and stir to combine.
4. Bring to a boil over medium-high heat, then reduce to low and simmer.
5. Cook for about 2 hours or until beans are tender and the soup is thickened, stirring occasionally.
6. Remove the ham hocks, shred the meat, and return it to the soup.
7. Adjust seasoning with salt and pepper as needed.
8. Serve hot, garnished with fresh parsley if desired.
