Smoky Ham and White Bean Soup

Ingredients

2 tbsp olive oil
1 large onion, chopped
3 cloves garlic, minced
3 carrots, sliced
2 celery stalks, chopped
1 lb smoked ham, diced
2 cans (15 oz each) cannellini beans, drained and rinsed
6 cups chicken broth
1 tsp smoked paprika
1 bay leaf
1/2 tsp thyme
Salt and pepper to taste
2 cups kale, chopped
1 tbsp lemon juice

Instructions

1. In a large pot, heat olive oil over medium heat.
2. Add the onions and garlic, sauté until translucent.
3. Stir in carrots and celery, cooking for 5 minutes.
4. Add the diced ham and cook until lightly browned.
5. Pour in the cannellini beans and chicken broth.
6. Season with smoked paprika, bay leaf, thyme, salt, and pepper.
7. Simmer for 30 minutes, stirring occasionally.
8. Add chopped kale and lemon juice, simmer for another 10 minutes.
9. Serve hot with crusty bread.

Storage

Let the soup cool completely, then store in an airtight container in the refrigerator for up to 4 days or freeze for up to 3 months.

Reheating

Reheat on the stove over medium heat until heated through, stirring occasionally. Add additional broth if needed.
