Smoky Ham and Bean Soup

Ingredients

1 lb smoked ham hock
1 tbsp olive oil
2 cloves garlic, minced
1 medium onion, chopped
2 carrots, diced
2 celery stalks, diced
1 can (15 oz) navy beans, drained and rinsed
1 can (15 oz) kidney beans, drained and rinsed
4 cups chicken broth
1 cup water
1 tsp smoked paprika
1/2 tsp ground cumin
Salt and pepper to taste
2 tbsp chopped fresh parsley

Instructions

1. Heat olive oil in a large pot over medium heat. Add garlic, onion, carrots, and celery, cooking until softened.
2. Add the smoked ham hock to the pot, followed by the drained beans.
3. Pour in the chicken broth and water, stirring to combine.
4. Add smoked paprika, cumin, salt, and pepper. Bring to a simmer.
5. Cover the pot and let the soup cook for 1.5 to 2 hours, stirring occasionally until the beans are tender and the flavors meld.
6. Remove the ham hock, shred the meat, and return it to the soup.
7. Stir in fresh parsley before serving.

Storage

Allow to cool, then store in an airtight container in the refrigerator for up to 4 days or freeze for up to 3 months.

Reheating

Reheat on the stove over medium heat, stirring occasionally until heated through. Alternatively, microwave in a microwave-safe container, stirring occasionally.
