Smoky Chipotle Spaghetti and Turkey Meatballs

Ingredients
1 lb ground turkey
1/2 cup breadcrumbs
1 large egg
2 cloves garlic, minced
1/4 cup chopped fresh cilantro
1 tsp chipotle powder
1/2 tsp smoked paprika
1 tsp salt
1/2 tsp black pepper
2 tbsp olive oil
1 lb spaghetti
1 can (28 oz) crushed tomatoes
1/4 cup tomato paste
1/2 cup chicken broth
1 tbsp balsamic vinegar
1 tsp dried oregano
1/2 tsp red pepper flakes
1/4 cup grated parmesan cheese
Salt and pepper to taste
Fresh basil for garnish
Instructions
1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
2. In a large bowl, combine ground turkey, breadcrumbs, egg, garlic, cilantro, chipotle powder, smoked paprika, salt, and black pepper. Mix until well combined.
3. Roll the mixture into 1 1/2-inch meatballs and place them on the prepared baking sheet.
4. Bake the meatballs for 20 minutes or until cooked through and lightly browned.
5. While meatballs are baking, cook spaghetti according to package instructions. Drain and set aside.
6. In a large saucepan, heat olive oil over medium heat. Add crushed tomatoes, tomato paste, chicken broth, balsamic vinegar, oregano, and red pepper flakes. Simmer for 10 minutes, stirring occasionally.
7. Add baked meatballs to the sauce, coat them well, and simmer for another 5 minutes.
8. Toss spaghetti with the sauce and meatballs until everything is well combined.
9. Serve hot, garnished with parmesan cheese and fresh basil.
Storage
Store leftover spaghetti and meatballs in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat in the microwave or on the stovetop until heated through, adding a splash of water if needed to loosen the sauce.
