Smoky Chipotle Pulled Pork

Ingredients

5 lbs pork shoulder
2 tbsp chipotle powder
1 tbsp smoked paprika
1 tbsp ground cumin
1 tbsp garlic powder
1 tbsp onion powder
2 tsp salt
1 tsp black pepper
1 cup apple cider vinegar
1/2 cup brown sugar
2 tbsp Worcestershire sauce
1 cup barbecue sauce
1/2 cup chicken broth
1 large onion, sliced
4 cloves garlic, minced

Instructions

1. In a small bowl, mix chipotle powder, smoked paprika, cumin, garlic powder, onion powder, salt, and pepper.
2. Rub the spice mixture all over the pork shoulder, massaging it into the meat.
3. Place the pork in the slow cooker. Add apple cider vinegar, brown sugar, Worcestershire sauce, barbecue sauce, chicken broth, onion slices, and minced garlic.
4. Cover and cook on low for 8-10 hours or until the meat is tender and easily shreds with a fork.
5. Remove pork from the slow cooker and shred using two forks. Discard any excess fat or bone.
6. Return shredded pork to the slow cooker and stir to combine with juices. Cook on low for an additional 30 minutes to let flavors meld.

Storage

Store leftovers in an airtight container in the refrigerator for up to 4 days.

Reheating

Reheat in a skillet over medium heat until warm throughout or microwave on medium power in 1-minute intervals, stirring in between.
