Ingredients
2 tbsp olive oil
1 large onion, diced
4 cloves garlic, minced
1 lb ground beef
1 lb ground pork
1 red bell pepper, diced
1 green bell pepper, diced
2 chipotle peppers in adobo sauce, minced
2 tbsp adobo sauce
2 cans (14.5 oz each) diced tomatoes
1 can (15 oz) black beans, drained and rinsed
1 can (15 oz) kidney beans, drained and rinsed
2 cups beef broth
2 oz dark chocolate, chopped
2 tsp ground cumin
2 tsp smoked paprika
1 tsp ground cinnamon
1 tsp salt
1/2 tsp black pepper
1 tbsp apple cider vinegar
Instructions
1. Heat olive oil in a large pot over medium heat. Add diced onion and minced garlic, sauté until onion becomes translucent.
2. Add ground beef and ground pork to the pot; cook until browned, stirring occasionally.
3. Stir in red and green bell peppers, chipotle peppers, and adobo sauce; cook for another 3-4 minutes.
4. Add diced tomatoes, black beans, kidney beans, and beef broth. Bring to a simmer.
5. Mix in dark chocolate, cumin, smoked paprika, cinnamon, salt, and black pepper; stir well to combine.
6. Reduce heat to low, cover, and let simmer for at least 45 minutes, stirring occasionally.
7. Stir in apple cider vinegar before serving.
