Smoked Salmon and Cream Cheese Blinis

Ingredients

1 cup all-purpose flour
1 tablespoon granulated sugar
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup buttermilk
1 large egg
2 tablespoons unsalted butter, melted
4 ounces cream cheese, softened
6 ounces smoked salmon, thinly sliced
Fresh dill sprigs for garnish
1 tablespoon lemon zest

Instructions

1. In a bowl, whisk together the flour, sugar, baking soda, and salt.
2. In another bowl, combine the buttermilk, egg, and melted butter.
3. Stir the wet ingredients into the dry ingredients until just combined.
4. Preheat a non-stick pan over medium heat and lightly grease.
5. Drop tablespoons of batter onto the pan, cooking blinis for about 1-2 minutes on each side until golden brown.
6. Remove blinis from the pan and let them cool slightly.
7. Spread a small dollop of cream cheese on each blini.
8. Top with a slice of smoked salmon and a sprig of dill.
9. Sprinkle with lemon zest before serving.

Storage

Store blinis in an airtight container in the refrigerator for up to 2 days.

Reheating

Reheat blinis in a preheated oven at 350°F for 5-7 minutes until warmed through.
