Slow Cooker Spiced Hungarian Goulash

Ingredients

2 lbs beef chuck, cubed
2 tbsp olive oil
2 large onions, sliced
3 cloves garlic, minced
2 tbsp sweet paprika
1 tsp caraway seeds
1 tsp smoked paprika
1/2 tsp cayenne pepper
3 cups beef broth
1 can (14 oz) diced tomatoes
2 bell peppers, sliced
2 tbsp Worcestershire sauce
Salt and pepper to taste
1/2 cup sour cream
2 tbsp chopped fresh parsley
Egg noodles or spaetzle for serving

Instructions

1. Heat olive oil in a skillet over medium-high heat and brown the beef chunks in batches.
2. Transfer the browned beef to the slow cooker.
3. In the same skillet, add onions and garlic, sautéing until soft.
4. Stir in sweet paprika, caraway seeds, smoked paprika, and cayenne pepper, cooking for an additional minute.
5. Pour in the beef broth to deglaze the pan, scraping any flavorful bits from the bottom.
6. Add the deglazed mixture to the slow cooker along with diced tomatoes, bell peppers, and Worcestershire sauce.
7. Season with salt and pepper, stir to combine, then cover and cook on low for 6-8 hours or until beef is tender.
8. Before serving, stir in sour cream and garnish with fresh parsley.
9. Serve the goulash over egg noodles or spaetzle.

Storage

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat in a pot over medium heat until warmed through, or microwave on medium power, stirring occasionally.
