Slow Cooker Herb-Infused Lemon Garlic Chicken

Ingredients

4 lbs whole chicken
1 lemon, sliced
4 cloves garlic, minced
1 onion, chopped
2 tsp salt
1 tsp black pepper
1 tbsp olive oil
1 tsp dried thyme
1 tsp dried rosemary
1/2 cup chicken broth

Instructions

1. Rinse the chicken and pat dry with paper towels.
2. Season the chicken with salt, pepper, thyme, and rosemary.
3. Place lemon slices and minced garlic inside the chicken cavity.
4. Scatter chopped onion at the bottom of the slow cooker.
5. Place the chicken on top of the onions.
6. Pour olive oil and chicken broth over the chicken.
7. Cover and cook on low for 6-7 hours or until the chicken is tender and fully cooked.
8. Carefully remove the chicken and let it rest for 10 minutes before carving.

Storage

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat leftovers in a microwave or oven until warmed through.
