Ingredients
2 lbs boneless, skinless chicken thighs
1 tbsp olive oil
1 large onion, diced
4 cloves garlic, minced
1 tbsp ginger, minced
2 tsp garam masala
1 tsp ground cumin
1 tsp ground coriander
1 tsp turmeric
1/2 tsp cayenne pepper
1 1/2 cups tomato sauce
1 cup heavy cream
Salt to taste
1/4 cup fresh cilantro, chopped
Instructions
1. Heat olive oil in a skillet over medium heat and sauté onions until translucent.
2. Add garlic and ginger, cooking for another minute until fragrant.
3. Stir in garam masala, cumin, coriander, turmeric, and cayenne pepper, cooking for another minute.
4. Transfer onion mixture to slow cooker.
5. Add chicken thighs and tomato sauce, stirring to combine.
6. Cover and cook on low for 6-8 hours or high for 3-4 hours.
7. Stir in heavy cream and season with salt to taste. Cook for another 15 minutes.
8. Garnish with fresh cilantro before serving.
Storage
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat in a saucepan over medium heat, stirring occasionally, until heated through.
