Slow Cooker Beef Stew

A classic and hearty beef stew with tender beef chunks, carrots, and potatoes simmered to perfection in a rich, savory broth. Ideal for chilly days, this slow-cooked meal offers comfort in every bite.

Ingredients

2 lbs beef chuck, cut into 1-inch cubes
3 tbsp all-purpose flour
2 tbsp olive oil
4 cups beef broth
2 cups water
1 lb potatoes, diced
4 carrots, sliced
1 onion, chopped
3 cloves garlic, minced
2 tbsp tomato paste
1 tbsp Worcestershire sauce
1 tsp dried thyme
1 bay leaf
Salt and pepper to taste
Fresh parsley, chopped (optional)

Instructions

1. In a bowl, toss beef cubes with flour, salt, and pepper. 2. Heat olive oil in a skillet over medium-high heat and brown the beef on all sides. Transfer to a slow cooker.
3. Add onion and garlic to the skillet, sauté until fragrant, then add to the slow cooker.
4. Stir in beef broth, water, tomato paste, Worcestershire sauce, thyme, and bay leaf.
5. Add potatoes and carrots, then cover and cook on low for 8 hours or high for 4 hours, until beef is tender.
6. Discard bay leaf, adjust seasoning, and garnish with parsley before serving.

Storage

Store in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat in a pot over medium heat until warmed through, adding a little water or broth if needed.
