Ingredients
4 lbs whole chicken
2 tsp salt
1 tsp black pepper
1 tbsp olive oil
1 lemon, sliced
3 cloves garlic, minced
1 onion, sliced
2 tsp dried thyme
2 tsp dried rosemary
1 tsp dried sage
1 cup chicken broth
Instructions
1. Rinse and pat dry the whole chicken.
2. Season the chicken inside and out with salt and black pepper.
3. In a large skillet, heat olive oil over medium-high heat and brown the chicken on all sides.
4. Transfer the chicken to the crockpot.
5. Add sliced lemon, minced garlic, and onion around the chicken.
6. Sprinkle thyme, rosemary, and sage over the chicken.
7. Pour the chicken broth into the crockpot.
8. Cover and cook on low for 6-7 hours until the chicken is tender and cooked through.
9. Remove the chicken carefully and let rest before carving.
10. Serve with the aromatic broth and vegetables from the crockpot.
Storage
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat in the oven at 350°F until warmed through or in the microwave using a microwave-safe dish.
