Sichuan Spicy Noodles

Ingredients

8 oz dried wheat noodles
2 tbsp Sichuan peppercorns
1/4 cup chili oil
3 cloves garlic, minced
2 tbsp soy sauce
1 tbsp rice vinegar
1 tbsp sugar
1/2 tsp salt
2 green onions, chopped
1/4 cup chopped peanuts
1/4 cup fresh cilantro, chopped
1 tbsp vegetable oil

Instructions

1. Cook the noodles according to package instructions. Drain and set aside.
2. In a pan, heat the vegetable oil over medium heat. Add the Sichuan peppercorns and toast for 1-2 minutes until fragrant.
3. Add the minced garlic to the pan and sauté for another minute.
4. Stir in the chili oil, soy sauce, rice vinegar, sugar, and salt. Mix well.
5. Toss the cooked noodles in the sauce until well coated.
6. Serve the noodles topped with chopped green onions, peanuts, and cilantro.

Storage

Store any leftovers in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat in a pan over medium heat, adding a splash of water if needed to loosen the sauce.
