Shepherd’s Pie

Ingredients

1 1/2 lbs ground lamb
2 tbsp olive oil
1 large onion, chopped
2 carrots, diced
2 cloves garlic, minced
1 cup peas
1 tbsp tomato paste
1 cup beef broth
2 tbsp Worcestershire sauce
2 tbsp fresh thyme, chopped
Salt and pepper to taste
4 cups potatoes, peeled and cubed
1/2 cup milk
1/4 cup butter
1/4 cup cheddar cheese, grated

Instructions

1. Preheat your oven to 400°F.
2. In a large skillet, heat olive oil over medium heat. Add the onions, carrots, and garlic, sauté until onions are translucent.
3. Add the ground lamb to the skillet, cook until browned.
4. Stir in tomato paste, beef broth, Worcestershire sauce, and thyme. Simmer for 5-7 minutes until slightly thickened.
5. Add the peas and season with salt and pepper. Transfer the lamb mixture to a baking dish.
6. Boil potatoes in salted water until tender, about 15 minutes. Drain, then mash with milk, butter, and salt.
7. Spread the mashed potatoes over the lamb mixture, sprinkle with cheddar cheese.
8. Bake in the preheated oven for 25-30 minutes or until the top is golden brown.
9. Allow to cool slightly before serving.

Storage

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat in a preheated oven at 350°F for 15-20 minutes or until heated through.
