Sheet Pan Veggie and Sausage Bake

Ingredients
1 lb sausages, sliced
2 cups broccoli florets
2 cups bell peppers, sliced
1 cup cherry tomatoes
1 large onion, sliced
2 tbsp olive oil
1 tsp dried thyme
1 tsp dried rosemary
1/2 tsp garlic powder
Salt and pepper to taste
Instructions
1. Preheat oven to 400°F (200°C).
2. In a large bowl, combine the sliced sausages, broccoli florets, bell peppers, cherry tomatoes, and onion slices.
3. Drizzle olive oil over the mixture and sprinkle with thyme, rosemary, garlic powder, salt, and pepper.
4. Toss everything together until well coated.
5. Spread the mixture evenly on a baking sheet lined with parchment paper.
6. Roast in the oven for 25-30 minutes, or until the vegetables are tender and sausages are cooked through, stirring halfway.
7. Remove from oven and let cool slightly before serving.
Storage
Store leftovers in an airtight container in the refrigerator for up to 4 days.
Reheating
Reheat in the oven at 350°F (175°C) for about 10 minutes, or until heated through.
