Shakshuka
Shakshuka is a vibrant and flavorful North African breakfast dish that features poached eggs nestled in a spicy tomato and pepper sauce. This hearty and savory meal is perfect for brunch and brings a delicious blend of spices to your table.

Ingredients
2 tbsp olive oil
1 large onion, chopped
2 red bell peppers, chopped
4 garlic cloves, minced
2 tsp ground cumin
1 tsp smoked paprika
1/4 tsp cayenne pepper
1 can (28 oz) crushed tomatoes
Salt and pepper to taste
6 large eggs
1/4 cup fresh parsley, chopped
1/4 cup feta cheese, crumbled
Instructions
1. Heat olive oil in a large skillet over medium heat. Add the chopped onion and red bell peppers, and cook until softened, about 6-8 minutes.
2. Stir in the minced garlic, cumin, smoked paprika, and cayenne pepper. Cook for another 2 minutes until fragrant.
3. Pour in the crushed tomatoes, then season with salt and pepper. Simmer for 10-15 minutes until the sauce thickens.
4. Make six wells in the sauce and crack an egg into each. Cover the skillet and cook until eggs are set, about 5-7 minutes.
5. Garnish with fresh parsley and feta cheese before serving.
Storage
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat gently in a skillet over low heat until warmed through.
