Seaside Bacon Swirls

Ingredients

1 lb large scallops
12 slices of bacon
2 tbsp olive oil
1 tbsp lemon juice
1 tsp garlic powder
1/2 tsp salt
1/4 tsp black pepper
1 tbsp fresh parsley, chopped

Instructions

1. Preheat your oven to 425°F (220°C).
2. Pat the scallops dry with paper towels.
3. Wrap each scallop with a slice of bacon and secure with a toothpick.
4. In a small bowl, mix olive oil, lemon juice, garlic powder, salt, and black pepper.
5. Brush the mixture over the wrapped scallops.
6. Place the scallops on a baking sheet lined with parchment paper.
7. Bake in the preheated oven for 12-15 minutes until the bacon is crispy and the scallops are cooked through.
8. Garnish with fresh parsley before serving.

Storage

Store in an airtight container in the refrigerator for up to 2 days.

Reheating

Preheat the oven to 350°F (175°C), place the scallops in a baking dish, and cover with foil. Reheat for 10-12 minutes.
