Seafood and Citrus Paella

Ingredients
2 tbsp olive oil
1 lb shrimp, peeled and deveined
1 lb mussels, cleaned
1 lb calamari, sliced into rings
1 onion, finely chopped
2 cloves garlic, minced
1 bell pepper, diced
1 cup peas
2 cups Arborio rice
4 cups seafood stock
1 cup dry white wine
1 lemon, juiced
1 orange, juiced
1 tsp smoked paprika
1 pinch saffron threads
Salt and pepper to taste
2 tbsp fresh parsley, chopped
Instructions
1. Heat olive oil in a large paella pan over medium heat.
2. Add onion and garlic, sauté until fragrant.
3. Stir in bell pepper and peas, cooking for another 3 minutes.
4. Add Arborio rice and cook, stirring, for 2 minutes.
5. Pour in seafood stock, white wine, lemon juice, and orange juice, and bring to a simmer.
6. Add smoked paprika, saffron, salt, and pepper, and stir to combine.
7. Arrange shrimp, mussels, and calamari over the rice.
8. Cover and cook on low heat for 20-25 minutes, until the rice is tender and seafood is cooked.
9. Remove from heat, sprinkle with fresh parsley, and let rest for 5 minutes before serving.
Storage
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat gently in a pan over low heat, adding a splash of water or stock to prevent drying out.
