Ingredients
1 lb shrimp, peeled and deveined
2 tbsp Sriracha sauce
1 tbsp honey
2 cloves garlic, minced
1 tbsp lime juice
1 tbsp olive oil
8 small corn tortillas
1 ripe avocado, sliced
1/4 cup cilantro, chopped
1 lime, cut into wedges
Salt and pepper to taste
Instructions
1. In a bowl, combine Sriracha, honey, garlic, lime juice, salt, and pepper. Mix well.
2. Add shrimp to the marinade and let sit for 10 minutes.
3. Heat olive oil in a pan over medium heat. Add marinated shrimp and cook until pink and opaque, about 2-3 minutes per side.
4. Warm tortillas in a separate pan or microwave.
5. Assemble the tacos by placing shrimp onto each tortilla, topped with avocado slices, cilantro, and a squeeze of lime juice.
Storage
Store leftover shrimp in an airtight container in the refrigerator for up to 2 days. Keep tortillas and avocado separate for best results.
Reheating
Reheat shrimp in a pan over medium heat until warmed through. Heat tortillas separately before reassembling tacos.
