Savory Tuna Delight Sandwich

Ingredients

10 oz canned tuna in water, drained
1/4 cup mayonnaise
1 tablespoon Dijon mustard
1 tablespoon lemon juice
1/4 cup celery, finely chopped
1/4 cup red onion, finely chopped
1 tablespoon fresh parsley, chopped
Salt and pepper to taste
4 slices whole grain bread
4 leaves of lettuce
2 slices of tomato

Instructions

1. In a medium bowl, combine the drained tuna, mayonnaise, Dijon mustard, and lemon juice.
2. Stir in the chopped celery, red onion, parsley, and season with salt and pepper to taste.
3. Mix everything together until well combined and creamy.
4. Lay out the slices of bread on a clean surface.
5. Evenly distribute the tuna mixture onto two of the slices of bread.
6. Top each with two lettuce leaves and a slice of tomato.
7. Close the sandwiches with the remaining slices of bread.
8. Cut each sandwich in half and serve immediately.

Storage

Store any leftover tuna salad in an airtight container in the refrigerator for up to 2 days.
