Ingredients

2 cups shredded sweet potatoes
1/2 cup all-purpose flour
1/4 cup grated Parmesan cheese
2 large eggs, beaten
1/4 cup chopped green onions
2 cloves garlic, minced
1/2 tsp smoked paprika
Salt and pepper to taste
1/4 cup olive oil for frying

Instructions

1. In a large mixing bowl, combine the shredded sweet potatoes, flour, Parmesan cheese, beaten eggs, green onions, garlic, smoked paprika, salt, and pepper. Mix well until all ingredients are evenly incorporated.
2. Heat olive oil in a large skillet over medium heat.
3. Scoop about 1/4 cup of the sweet potato mixture and place it in the skillet. Flatten slightly to form a pancake shape.
4. Cook each side for about 3-4 minutes, or until golden brown and cooked through.
5. Remove from skillet and place on paper towels to drain excess oil.
6. Repeat with remaining mixture.
7. Serve warm with your favorite toppings or dips.

Storage

Store leftover pancakes in an airtight container in the refrigerator for up to 3 days.

Reheating

To reheat, place pancakes on a baking sheet and warm in a preheated oven at 350°F (175°C) for about 10 minutes, or until heated through.
