Savory Sweet Potato Delight

Ingredients

4 lbs sweet potatoes (peeled and cubed)
2 tbsp olive oil
1/2 cup chopped fresh rosemary
1 tsp ground black pepper
1 tsp kosher salt
1/4 cup unsalted butter (melted)
1 cup grated Parmesan cheese
1/2 cup toasted pecans (chopped)

Instructions

1. Preheat oven to 375°F (190°C).
2. In a large pot, boil sweet potatoes until tender, about 20 minutes.
3. Drain and mash the sweet potatoes in a large bowl.
4. Mix in olive oil, rosemary, black pepper, kosher salt, and melted butter.
5. Spread the mashed sweet potatoes into a 9x13 inch baking dish.
6. Sprinkle Parmesan cheese evenly over the top.
7. Bake for 25 minutes, or until the cheese is golden and bubbly.
8. Garnish with toasted pecans before serving.

Storage

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat in a preheated oven at 350°F (175°C) for 15-20 minutes until warmed through.
