1 pie crust (9-inch)
2 cups fresh spinach
1 tablespoon olive oil
1 large onion, thinly sliced
3 large eggs
1 1/2 cups half-and-half
1 cup crumbled feta cheese
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon nutmeg
Instructions
1. Preheat oven to 375°F (190°C).
2. In a skillet over medium heat, add olive oil and onions. Cook, stirring occasionally, until onions are caramelized, about 15 minutes.
3. Add spinach to the skillet and cook until wilted, about 2 minutes. Remove from heat.
