Savory Southwest Hamburger Casserole

Ingredients
1.5 lbs ground beef
1 medium onion, chopped
1 red bell pepper, chopped
1 cup frozen corn
1 (15 oz) can black beans, drained and rinsed
2 cups shredded cheddar cheese
1 (10 oz) can diced tomatoes with green chilies
1 cup salsa
1 packet taco seasoning
2 cups crushed tortilla chips
1/2 cup sour cream
2 tablespoons olive oil
1 teaspoon ground cumin
1 teaspoon chili powder
Salt and pepper to taste
Instructions
1. Preheat your oven to 375°F (190°C).
2. In a large skillet, heat olive oil over medium heat. Add chopped onions and red bell pepper, sauté until soft, about 5 minutes.
3. Add ground beef to the skillet and cook until browned, breaking it apart with a spoon.
4. Stir in taco seasoning, cumin, chili powder, salt, and pepper. Cook for another 2 minutes until the spices are well incorporated.
5. Add in the black beans, corn, diced tomatoes with green chilies, and salsa. Mix well and let it simmer for 5 minutes.
6. In a 9x13 inch casserole dish, layer half of the beef mixture, followed by half of the crushed tortilla chips, and half of the shredded cheese.
7. Repeat the layers with the remaining beef mixture, chips, and cheese.
8. Cover the dish with aluminum foil and bake in the preheated oven for 20 minutes.
9. Remove the foil and bake for an additional 10 minutes until the cheese is bubbly and golden brown.
10. Let it cool slightly before serving with a dollop of sour cream on top.
Storage
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat individual portions in the microwave for 2-3 minutes or until heated through. Alternatively, reheat in the oven at 350°F (175°C) for 10-15 minutes.
