Ingredients
1 lb dried black-eyed peas
4 cups water
1 smoked ham hock
1 medium onion, chopped
2 cloves garlic, minced
1 tsp smoked paprika
1/2 tsp cayenne pepper
1 tsp salt
1/2 tsp black pepper
2 cups chicken broth
1/4 cup chopped fresh parsley
Instructions
1. Rinse and sort the black-eyed peas, removing any debris.
2. In a large pot, combine black-eyed peas and water. Bring to a boil, then reduce heat and simmer for 1 hour.
3. Add the smoked ham hock, onion, garlic, smoked paprika, cayenne pepper, salt, and black pepper. Stir well.
4. Pour in chicken broth and bring mixture to a simmer. Cook for an additional 1.5 hours, stirring occasionally, until peas are tender.
5. Remove the ham hock, shred any meat, and return to pot. Stir in chopped parsley before serving.
Storage
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat on the stove over medium heat until warmed through, adding a splash of water if needed.
