Savory Smoked Ham and Heirloom Bean Soup

Ingredients

2 tbsp olive oil
1 large onion, chopped
2 cloves garlic, minced
3 carrots, diced
2 celery stalks, diced
1 lb smoked ham hock
1 cup heirloom beans, soaked overnight
6 cups chicken broth
1 tsp smoked paprika
1 bay leaf
Salt and pepper, to taste
2 tbsp fresh parsley, chopped

Instructions

1. Heat olive oil in a large pot over medium heat.
2. Add onion and garlic, sauté until translucent.
3. Stir in carrots and celery, cook for 5 minutes.
4. Add smoked ham hock, heirloom beans, and chicken broth.
5. Stir in smoked paprika, bay leaf, salt, and pepper.
6. Bring to a boil, then reduce heat to low and cover.
7. Simmer for 2 hours, or until beans are tender.
8. Remove ham hock, shred meat, and return to the pot.
9. Discard bay leaf and adjust seasoning.
10. Stir in fresh parsley before serving.

Storage

Store the soup in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat in a pot over medium heat, stirring occasionally until warmed through.
